Q: Using O2 sim to activate then use T-Mobile?

If I was to buy a O2 sim for PAYG (UK), restore to V2, activate through iTunes and then replace the O2 sim with the T-Mobile sim, would that work?

My T-Mobile contract doesn't run out for another month and I want to get V2 software plus I want to use it without having to unlock the phone (using V 1.1.4 obv!).
