Hello,

I think I have decided on a (2009) quad @ 2.66ghz, 3 GB ram, and 2x GT120 cards.

This comes out to $2649 on store.apple.com.

Two questions:

1) should I expect this price to be the same from the local apple store (once they receive them)

2) will my local apple store have extra gt120 cards on hand, and are happy to install them, or is it a hassle to add a second card at the retail store ?

You can't do upgrades from the Apple Store, but the price would be identical. It's APPLE.

Odd ... when I bought my mac mini from the local apple retail store, it had a base config of 1 GB, but I bought the second GB and they upgraded it right there for me ...

That is no longer possible ?
