If I exchange my phone right at the 14 day mark, will my eligibility for a Sprint upgrade still be able to be reset so I can use it to get a different phone, or is there is different length of time where I could be locked in with Sprint even though I can return to Apple ?

As long as your within the return period your upgrade eligibility would be restored and you should be able to purchase/upgrade to a new phone within seconds once all the systems update with the info
As long as you are within your 14 days (you will need further clarification on whether or not your purchase day counts as day one. Back when I worked for them, day 1 starts the day of purchase) you may return and pick another device. Your 14 day trial, however, does not reset. So if you return on day 13, you really will only have until the next day to return.
At the end of the day, this is a question better suited for your local Sprint store.
