I've been searching around and can't find a clear answer on this. Currently have a Series 2 and have a Series 4 ordered...What happens with your accumulated activity and achievements when moving from one watch to another, and what is the correct process? Planning on selling my S2 once I get the S4...

Seems like I can:

1 - Unpair the old watch, do a backup of my phone, then pair the new watch and restore from a backup? Does the activity and achievements get carried over?

2 - Pair the new watch and keep the original paired as well, then unpair the old watch...That's if I want to set up the new watch as "new" and not restore from a backup. If I do this method, when I finally un-pair the old watch, will the activity and achievements stay?

3 - Create an itunes encrypted backup and then restore from that?

Like I mentioned, my main concern is keeping my activity and achievements...
 
Yes, it can be done. You need to be sure of a couple of things before moving from one watch to another:

1. You have Apple Health being backed up to your iCloud account (Settings -> Apple ID -> iCloud).
2. You have a current backup of your iPhone. (Watch is backed up when iPhone is)

Unpair your old watch first, then pair the new watch. During setup of the new watch, you will be asked if you want to restore from backup. Note that unpairing also backs up the Watch to iCloud.
