I own an iPhone 3GS and generally only get about 5 hours of usage with it starting at 100% at the beginning of the day. I keep bluetooth and notifications turned off. Brightness is set on Auto and at about 50%. I rarely ever use GPS. Mainly just internet and texting, with possibly one or two short calls a day. I use WiFi a good bit of the time and 3G when I have to. I feel like I should get much better battery life. I also constantly close any apps that could run in the background.

How old is your phone?
The battery will eventually loose life and require replacement.
In addition, if you're in an area of poor cell strength, it'll use more power.
 
5 hours is quite good. Even on the new iphone 4, it's only rated for 6 hours of internet use. On my iphone 4, my phones reports 5-6 hours of use before it reaches 0%, but in reality i'm using it for less than 2 hours when it measures 5-6.

If you only use the phone for 2 hours, yet 5-6 hours are reported you have programs running in the background.
