So here it is. I've decided that I'm going to buy a current MBP and iPod Touch through the education program. I will not however purchase these until like September 14. If Apple releases revisions of both, or one, in September, will I be able to get a free upgrade if it is in like two weeks or something? Thanks for all the help!

Apple will offer you the revisions if they come out within 14 days of your initial purchase, if I understand correctly.
No, they won't offer you the revisions unless they apply to the rebate program (which they won't if they come out after it's over). If they come out after the back-to-school deal is over, you keep what you have.
