I have a 2 TB external drive I wanted to back up to using CCC, will CCC need the whole drive to create a bootable disk? Is it possible to dedicate like 1 TB for CCC and use the rest as a normal hard drive?

Yes, but you need to be sure to back up the non CCC partition and not use the partition to store the data. That is if the drive fails you lose your data and backup.

I partition my HD using Disk Utility and direct CCC to clone to the appropriate partition
