I have a white unibody MB that I recently purchased a little over a month ago. I have charged my macbook over 40 times since the purchase. Am I charging my macbook too much and is coconut battery accurate? My battery health was at 100% a few hours ago now its at 97-96% does coconut battery fluctuate? Thanks for your help.

The battery health and measurement probably fluctuates by 5-10% and change every time you turn your mac on. The more you use the battery, the worse it gets. On my macbook, I have used about 40 cycles and my battery health is down to about 90%. If you charge and discharge fully everyday, you will have to replace your battery faster than someone who doesn't use the battery as much, but if you need to use battery, by all means, use it.
