Hello, there seems to be a couple of different types of docks for the Mac Mini (M1/others) that also includes enclosure to upgrade the storage. In terms of hard drive upgrade with hard drive type and speed, it seems to very from product to product the type of hard drives they support with some even supporting multi types.

For example:
2.5” SSD (For example Samsung 870 QVO)
M.2 SATA SSD
2.5” HDD
And probs more!

In terms of 2.5” SSD and M.2 SATA SSD for speed is there much of a difference between the two types? Since I was looking at Satechi Stand and hub with SSD enclosure that supported only the M.2 SSD.
 
SATA = ≈550 MB/s
NVMe = ≈3500 MB/s

They can be limited by the connection type:
≈460 MB/s: USB 5 Gbps
≈1060 MB/s: USB 10 Gbps
≈2900 MB/s: Thunderbolt

HDD's (SATA mechanical drives) are limited to ≈200 MB/s
