So I recently bought a Mac Pro... I plan on running a dual monitor setup, and I have found two monitors with vga outputs... I also found two vga to minidisplay port adapters... My question is, if i connect both monitors via both mini display ports, would they function as an individual widescreen monitor?

If you use the two Mini DisplayPort interfaces on the GPU via two Mini DisplayPort to VGA adapters for two displays, the two displays will get recognised as two different monitors, thus you will be able to put them side by side and use them at their individual resolutions. The Menu Bar will only stay on the monitor you selected, but there is SecondBar for this.
