I've spent many years converting all my DVDs to m4v files. This has included ensuring the following are embedded into the file:
  • Cover art and meta data
  • Soft subtitles (embedded using Subler)
  • Chapters (including titles and thumbnails)
  • Alternative language / commentary tracks
  • DTS sound
I'm looking for a 3rd party app to play back the files stored on my NAS without the need for iTunes to be running. The usual suspects have come up - Plex, InFuse and MrMC (Kodi/XBMC), but I don't know how they will handle all the extras I've put into the files. Do any of them use the inbuilt meta-data before scraping the net sites? Can they turn on/off embedded subtitles? can you switch audio tracks easily and do they support DTS-in-m4v?

There is an option within Infuse that allows you to use embedded metadata. I assume that will give you what you want.
