No, you don't have to restore your iPod to do it, you have to put it into DFU mode to do it, but ignore the iTunes warning and just proceed with the jailbreaking. After jailbreaking, everything should be there.

I don't know about limera1n, but with greenpois0n you don't have to have iTunes running, you just have to have it installed, so there needn't be an iTunes warning.
