I'm looking to possibly pick up a MBP 13 inch at the beggining of the year and I'd love to go with a SSD, but just can't afford it right now. If I decide later on, can I change the HDD out with a store bought SSD?

Yes you can. Next year sometime they will most likely start dropping in price as well as some higher GB ones become available.

And before you get fed misinformation, swapping it out yourself DOES NOT void your warranty.
 
I recommend using an aftermarket SSD for cheaper costs and better performance!
