i have two Eufy Cameras for outside.
in the home app i can configure how it records, i can also do that in the Eufy app.
if the cameras are in the home app, should i be using the camera settings there or in the eufy app?
 
It's been a while since I've used my cameras in both apps, but I'm pretty sure the settings are independent of each other. Set it how you want it to behave in the Home app, and set it how you want to behave in the Eufy app. You can also just turn the camera off in the Eufy app if you only plan on using the Home app.

Basically, if I remember correctly, both get the same video stream...but each records and processes it differently according to their own settings.
 
one small thing, homekit it limited to 1080. If you add cameras to homekit, they will drop to 1080, even when recording in their own apps. So depending on your model, you may get higer resolution when using only their app. (at least that's the way my Eufys work)
