When the iPhone syncs with iTunes and stores all of the information on the computer, which files in the MobileSync backup folder contain the notes and the voice memos?

The story: I accidentally fried my iPhone 3GS in a swimming pool, so I tried to sync a previous backup of it to an older iPhone 3G, but its firmware was too old to sync the information to it. I really need my notes and voice memos back, because they have important information in them. And before you ask, no, I do not have my voice memos in my iTunes library. I deleted them from my iTunes library because I didn't want some mindless idiot walking up to my computer and listening to them.

So for now, I'm looking for a way to manually retrieve my notes and voice memos from my computer's iPhone backup. I definitely need them sooner than I can get a new iPhone. Thanks in advance for any answers.

Anyway, I helped myself and found iPhone Backup Extractor. Once you extract the files, you can just use SQLite Database Browser 1.3 to find the notes and voice memos.
 
Iphone backup

Hey, I just got a new iPhone 4s, my old phone was jailbroken
I want to back up all of my contacts and messages etc. from my old phone to my new iphone. If i do this, will my new iphone be jailbroken also if it isn't already?
I don't want to void the warranty of this phone, as it is my key to an iPhone 5.
