I currently have an iPod touch (MB model) running 4.0 firmware, jailbroken using JailbreakMe.com by Comex. I want to try jailbreaking 4.1 using greenp0ison so I can get game center (I am aware of the ways to get gamecenter on 4.0, and i can't stand the outcome). So if I were to do so, and copy my "/" folder on my iPod to my computer before the re-jailbreak, would I be able to revert back to exactly as it is now if i dont like the greenp0ison jailbreak? I am not sure, but I think restoring from itunes removes all jailbroken apps, including cydia. Tell me if i'm wrong there, as i think i might be.
 
i don't think you can revert back to the way it is exactly. i have basically the same thing you have and it doesn't sync all of my various cydia apps and themes. at one point i made a mistake with some cydia stuff and it messed up my springboard so i had to restore. then i had to re-jailbreak. i'd reccomend upgrading to 4.2.1 and jailbreaking with redsn0w 0.9.6b4.
