Lets say my iPhone needs to be sent off for repair, instead of paying $30 and getting a loaner iPhone, can I remove the SIM from my iPhone and put it in an unlocked phone that I already have and use that until my iPhone returns?

Meaning, can I take/send my iPhone to Apple without a SIM and not have any issues?

I have a Blackberry that I can probably get $75 for, but would rather just keep it and use as a temp phone since its unlocked.
 
I have taken my SIM card out and used it in another phone and replaced it in the iPhone without any problems. However, this was pre 1.1.1, but that shouldn't affect it.
 
When my iPhone was repaired I didn't want to pay $30 for a week. So I just put by sim in an older phone and it worked fine, I was able to put the sim back in my iPhone when it came back from repair.
 
Yes, as long as the phone is compatible with your sim/service you can stick it in any phone.
