Was wondering if it is possible to change the appearance so that the colors are 'inversed'. Like have a black background with white text and so on. Can it be done?

That only inverts colors on the whole system, not just in Mail. If you're talking about composing a new email, you'd probably have to get a stationery with a black background, then just change your font color to white. I'm not sure you can set the default for Mail to always display everything, (inbox, messages, etc.) with inverse colors.
