Sorry, I have looked in several places for this answer but I just wanted to clarify. How many slots are in the new macbook? If I wanted to buy a 2gb memory stick, would I only have 3GB of memory or 4?

2 slots. 1GB + 2GB would give you 3GB. I think you get the best performance from matching sizes, but I can't find where I read that.

In the new macbook, there is 2gb of memory(2x1gb). If you add a 2gb stick and take out 1gb of memory, you would have 3gb worth of memory.

I can't really afford two sticks of memory. Would it still run ok with a 1 and a 2?
