I have SlingPlayer on Macintosh, which I love.

However, I was thinking about buying the EyeTV, but am fairly new to it.

I live in an apartment in college. In my bedroom I don't have DirecTV hooked up. Would I be able to still use EyeTV on my laptop via DirecTV? Also, would it screw up the TV in the living room if someone is watching it? What I mean is would I be forced to watch the same thing?

As long as the DirectTV box has component (Red, yellow, white cables) or even S-video you can plug into an EyeTV hybrid. It's not possible to connect two different devices to the same cable box and change a channel on one and not on the other device since the channel is being changed on the box - essentially same box = forced to watch same thing!
