How can I accomplish this from an ipod touch?
From what I've seen most apps need you to have a phone number.

I use textPlus and it doesn't need a phone number, either. If you send to a regular phone, they can just respond to your message. If a regular phone wants to send to you they send to a short code (60611) with your textPlus name at the beginning of the message.

So here is a question that may sound like its really out there lol.

If an iphone user txts someone, I'm sure it'll show the number they txted and info on their monthly statement. If they text someone that is using textfree or textplus would such records still be recorded or is it app based? Hope my question is clear.

If you're jailbroken, there's always Google Voice Mobile. If you're not jailbroken, I think you can still use the GV web interface. The best part of this is that it appears to be coming from a real number, and you can have incoming texts forwarded to your phone, email, or both. If you request an invite, it should get to you within a couple days.

Yes, the text message would appear on the monthly statement because the iPhone user is still using his/her paid text messages, despite where the messages are going. BUT, if the iPhone user uses the APP to text, it's going through the paid data plan and therefore you won't be charged for a text message.
