I'm currently in contract with AT&T. If I were to buy an unlocked iPhone 4S when Apple starts selling them, would I be able to pop my current AT&T micro sim in it and still keep it unlocked? Or would AT&T lock it once I activate it or sync it with iTunes?

Yes, offcourse.
AT&T nor any carrier can lock a factory unlocked iphone.
Just the iphones sold before locked to AT&T remained locked.
