Currently I've iPhone 3GS running 5.0.1. Now if I get it unlocked from At&t and restore then it'll be updated to 5.1 which cannot be jailbroken right now. Is there any way to unlock and restore to 5.0.1 instead, so that the option to jailbreak in future will still be available.
 
You can jailbreak iOS 5.1 on a 3Gs, but it's a tethered. Also if you have the older old bootrom 3Gs it'll be an untethered jailbreak.
 
You can use redsnow to deactivate it.
And then plug it to itunes in order to activate and if the unlocked IMEI was entered you will get the congradulations your iphone has been unlocked message.
This way you can stay on 5.0.1
Or if you have shsh blobs for 5.0.1 you can restore to that at any time or use redsnow to pull your current shsh blobs from 5.0.1 and submit them to cydia for future use.
So many options, the easier IMO and what I did was just deactivate the iphone and then activate it again with itunes.
