A friend is buying my Series 3 cellular AW. Since my new watch is set to arrive tomorrow, along with my new phone, I want to go ahead and get my series 3 unpaired, restored to factory settings, and removed from my Apple ID.

Now this isn’t my first watch or anything, but I’ll be damned if I can remember how to do all this.

When I unpair it, is it going to automatically go back to factory settings, or is there something else I need to do?

You can trigger a back-up in the settings before you wipe it.

To retain ALL your data I recall something about needing to back up your phone to iTunes and encrypt the back-up to preserve things like work outs if you have them. But I might be confusing that with needing to back up and restore a phone, not a watch.
 
Honestly, I don’t care about backing it up. I’m planning to set up my new watch as new, and don’t really have anything I need to save on this one.

Don't back it up.

Turn on all syncing options in iCloud, and start your phone fresh too.

You can choose "Reset" in the settings on the watch itself, and it will unpair and reset without a backup.

Yes, unpairing will set the watch back to factory settings.
