My iPad first gen is jailbroken untethered on iOS 5.0.1
But it crashes a lot, and I was wondering if updating to ios 5.1 would stop it crashing as much?

If I were to do this, would I have to lose the jailbreak before I update, and then re jailbreak?

When you "update" to a new iOS/firmware direct from Apple you are installing a clean nonjailbroken iOS/firmware on your device. You must then re-jailbreak your device and redownload all your Cydia apps and tweaks.
