Question about watch backups

i had a glitch when I moved to the new phone. I tried pairing the watch and it wouldn’t setup from the most recent backup, only one from sept. I restored ok from that but had to reset things like watch faces.

questions: I think I should unpair so I have a good backup now so that doesn’t happen again, am I right? (Just unpair the watch and repare it right?)
And ? How many backup choices will keep being there, Will those “bad ones” get replaced in time or is there a way to delete them.

Was your most recent backup from an iPhone on 11.1? You might have needed to update a new 8 or X to 11.1 before trying to pair the phone and restore that backup.

I made sure everything was updated, and backed up. When I went to set the watch on the X I had 3 backup choices, sept and two that were current but neither worked
