Make a profile for Google Play Music? I have one for Pokemon Go, where it increases screen timeout when Pokemon Go is launched and restores it back to normal when I switch to another app.

EDIT: Add Profile -> State -> BT Connected <your car audio device> (assuming you're using a Bluetooth connection to your car) is where I'd start investigating a possible solution.
