So I'm looking at the cMBP and I see it only has one Thunderbolt port. I realize that if I had multiple TB drives I can just daisy chain them. But what happens if I want to connect a TB drive and an HDMI monitor (Or DVI)? How can I do this? Which adapters do I need?

If you use drives which have two Thunderbolt ports (so that you can daisy chain), then you can plug a Mini-Displayport video cable into the last Thunderbolt port in the chain to connect your monitor.

For example: MBP->Thunderbolt Cable->Thunderbolt Drive->Mini-Displayport to HDMI cable->Monitor
