im putting in a second hard drive in my mbp 2011 and can't figure out what would be better a smaller ssd or the 1tb hdd I had in it. I'm currently running startup on 512gb ssd.

Only you can decide how much space you need and how fast you need that storage to be. You actually haven't asked a question here but if the majority of your storage needs are for media files or photos the. The HDD will be fine in conjunction with your SSD.
 
The SATA connection for the optical bay in the 2011 MBP may not be able to go at SATA3 speeds. You should be able to get SATA2, which will be around the mid-200MB/sec. vs. about 100MB/sec. tops for an HDD. A few people are able to get SATA3 speed in the 2011 MBP optical bay, some can get it if they use the Optibay Extreme, but I see that costs $99.
