My soon to be wife and I both have iPods and will both have iPads in the next few weeks. My question will purchases from iTunes and the app store work for a whole family of devices or do you need to have separate accounts and buy copies of ________product for each device.

You can sync as many iDevices as you want to a single iTunes account.
I recommend setting up seperate iCloud accounts for contacts, photos, backups, etc. Then share a common iTunes Store account for apps, music, and video.
