Question on new iPhone and restore

So I currently have a 6S Plus and am upgrading to the XS Max. My current phone is backed up tot the cloud. I understand that it’s a pretty simple process. However, today I did the upgrade to iOS 12 on the current phone.

Does anyone know if the new phones ship with iOS 12? If so, no issue. But if the new phone comes with 11.4, won’t that cause a problem with the restore? Any suggestions for the easiest way to make this happen?

The new phones ship with iOS 12. I don't have one, but every review discusses iOS 12 and I think it'd be a big deal if you had to upgrade your phone day 1.

I'm interested in any issues if I leave my current phone on iOS 11.4.1 and then choose to restore that when I get my new phone, does that work?
