Question on template and video transfer

I'm using iphone 4s

2 questions;

1) How to do a template where I can put some standard messages.

2) I took some video using GH-1 camera and downloaded to computer. The file ext. is xxx.MOV and opened in Quicktime. But I can't transfer the video to iphone via itune. Do I need some conversion or what?
