I currently have an S8 GPS+cellular, and will be getting an AWU2 Black Titanium on the 20th. I originally intended to trade my S8 in, but the trade-in value isn't that great so I'm considering keeping it as a backup/second watch instead.

Question is: When I set my new AWU2 up and transfer the cellular service over to it, is it possible to then factory reset my S8 and reconnect it to my phone as a second watch without activating the cellular service on it? In other words, just have it function as a regular GPS-only watch, without the cellular connection?

Yes, just un-pair and setup as new, you get to chose to setup cellular or not

As I remember from last year, there's no need to reset the S8 - as part of the new watch setup you'll be asked if you wish to transfer the cellular plan to the new watch. Old watch will keep working fine.

Kept my old S6 when I bought my S9 with intent of using the S6 for sleep tracking. I just swap watches off the charger at bedtime and after I wake up.
 
Thanks for the responses - with that being the case I'm definitely going to hold on to the S8. It's still a good watch, battery health is at 84% but it still gets me through a day's use so it will serve fine as a backup/second watch. Using it less will mean fewer charge cycles, so the battery should hold out for a good while. I just can't see keeping the cellular plan on it and paying that money every month when it won't be my main watch.

That may be my use case for it, I could see doing it that way. I wear the S8 for sleep tracking now, so it would be same same for me.

I wear my U2 for about 38hrs straight, so sleep track 1 night, then the evening of the 2nd day put U2 on charger and wear my S7 for sleep tracking for 1 night, next morning Wear U2 again.
Caveat: in order to start tracking for sleep apnea once it’s released, will have to change that pattern to wear U2 for sleep tracking only for at least 30 days/nights
