Questions about Applications on iPod Touch

Hi everyone, I jailbroke my iPod touch yesterday after holding out for a while. I used the iJailbreak and I must give kudos to how easy it was to use. I have two questions however, is it possible to get your hotmail account in the mail application? if so, how? and what if I installed an application on my Touch that I don't want anymore, how do I delete it or uninstall it? Do I have to restore my Touch and then redo the entire iJailbreak? thanks a lot for your help!
