So I understand that the series 3 is the latest but on the Apple site they don't have series 2 anymore. Is the series 1 on the Apple site the replacement to series 2?

Am I correct in assuming the series 1 is NOT water resistant?

When Apple released the Series 3 Apple Watch, they discontinued the Series 2. The new series 3 Apple Watch is the Series 2. The Series one existed when it launched back in September 2016 and is stillavailable for sale currently through Apple.

The Apple Watch Series 1 has a Splash resistance rating of IPX7.
 
Series 0 - original Apple Watch. Slow processor, not waterproof, dimmer screen.

Series 1 - same body and screen as series 0 but with faster processor from Series 2

Series 2 - faster processor, brighter screen, waterproof

Series 3 - even faster processor, LTE option, waterproof

Basically series 1 is the original watch with a fix for its painfully slow CPU by including the series 2 cpu but nothing else new. This allows a cheaper option while not having the too slow experience of the first Watch.
 
It's a little confusing. Note that Series 2 also introduced GPS.

My AW0 is water resistant. It gets wet sometime - such as hand washing and the occasional quick rinse.

The Series 2 included a GPS, but so does the Series 3. The Series 3 main difference is LTE. And also, the Series 2 Apple Watch is 50 m water resistant, where the first generation Apple Watch/Series one is only rated for splash resistance, but Apple stated it's acceptable if the first Gen Apple Watch gets wet for hand washing and cleaning the Digital Crown, but they recommend you dry it off.
