Been an Android user all my life, now thinking to get a SE2020 but have a few concerns.

1. Is there a Newpipe/Youtube Vanced alternative in IOS?

2. Is it possible to simply drag a file, be it music or document etc, from PC to SE and vice versa? I.E. Itunes not involved at all.

3. All my music files are mostly Opus, some Flac. Can SE play them as they are natively with no conversion whatsoever?

How is the sound quality of SE btw?

No, no and no.
There are workarounds for everything, 3rd party apps, conversions, jailbreak, cloud solutions involved etc, but it's not plug and play like android (for those 3 things at least).

2. If you have a Mac, you can Airdrop files into the iPhone and vice versa wirelessly without iTunes.

3. Natively, no. But you can download apps like VLC and play those, I think.
