I don't know if this has already been mentioned (please excuse me if it has... just trying to pass on my findings to everyone else :)), but next time your using another set of earbuds with your iPod Touch that don't work because they're not Apple's, plug your iPod Touch into your Mac, PC, USB Power Adapter, ect. and you should find it clears the problem right up. Now, please note I've found this works with SOME earbuds but NOT all. I honestly couldn't tell you a spec difference between what works and what doesn't. Play around with it and see what works.

Now, I know being tethered to a Mac or power outlet limits your mobility and the iPod's are designed to be portable, but if your at your Mac or in your car trying to play your iPod Touch via the AUX port, your not moving too far so it shouldn't too much be an issue.
