I'm in a holding pattern on my MBP purchase. When I do finally buy, I intend to purchase AppleCare for it.

There's a screaming deal (about $210) on a new, in-the-box AppleCare MBP plan available from a local authorized Apple dealer, but quantities are limited. It probably won't be there tomorrow.

Question: if I buy an updated MBP, will this AppleCare apply to it, or would the coverage somehow change w/the new release?

Question #2: Assuming that it will apply, do you see any reason why I should NOT buy the AppleCare today at that price?

Yes, any MBP Applecare plan you purchase can be used with any qualifying MBP (any new or refurbished unit purchased from Apple or an authorized dealer within the last year), whether you purchase the macine today or next month or next year for that matter.

I say go for it if you really feel you need it. You might be able to find it cheaper on eBay.
