Just a simple question for you. Is there any downside to toggling cellular off until needed? I live in a low signal area, so when away from my phone the battery life drops really fast. Thanks

I would say no, there is no issue with this. I do this myself to save battery life.

Normally Celluar will not power on by default unless no Bluetooth or Wi-Fi are avalable or unless you are not near your watch and don't have a bluetooth or Wi-Fi connection to your iPhone. ( I use Airplane mode on my watch when away from my iPhone or Wi-Fi or LTE for extended periods of time ) to save battery.

Just remember to re-enable when you get back to civilization.
