Quick question for Apple Watch Pros :)

So, I have an old Series 1 Apple Watch that my 10-yr old wants to use as a simple watch. I know I can't set it up as a "family member" since it is not a cellular watch, but, if I add it as another watch, everything syncs to it. I can turn off the notifications but is there a way to stop reminders, notes, messages (most importantly), contacts etc. from syncing to it?

You don't have to have cellular for a family setup.

Unfortunately, here's the very first requirement for this:

• An Apple Watch Series 4 or later with cellular,* or Apple Watch SE with cellular, with watchOS 7 or later.

Nope, if you check the asterisk note:

* A cellular plan isn't required to set up an Apple Watch for a family member, but is necessary for some features.
