Talking about the refurb here, not the latest iMac.

1x512 or 2x256?

I know it has 2 slots, I'd like to go from 512 to 1GB. Is it 256 on-board + 1 256 DIMM, or 1 512 DIMM?

There are 2 sockets and none soldered on, so it is either 1 x 512 DIMM or 2 x 256 DIMMs -- depending on what Apple decided to put in.

Thanks.. I found the following on Apple's site (of all places!.. who would've thought that!)

If you get a new iMac G5 that has one DIMM installed, the 17-inch model usually has the memory in the inside slot and the 20-inch model usually has the memory installed in the outside slot.

I'll just order a 1GB dimm and then see what shows up when I order the refurb 20".

It should just be one 512. That's what my friend's came with, and we put another 512 in. Only the new ones have 1 soldered on.
