Anyone know how I can rip DVD's (legal ones, of course!) with multi-channel audio?

I'm trying to get my DVD collection onto my server (yes, all my own DVDs) usin Handbrake - which seems to have a 5.1 channel audio setting, but either it doesnt, or QT7 player only recognises L&R channels.

The idea is to be able to get my get the entire collection in iTunes on my server so I can surf it from the mac mini plugged in to the TV.

But the idea will fall apart if I lose the multi-channel audio.

Ideas bright people?

You'd have to rip it in a manner that preserves the AC3 5.1 soundtrack, because the Quicktime multi-channel audio isn't supported by Dolby Digital. I'm not sure of any ripping applications that would do so on a Mac, but maybe someone else will be able to help.
