Quicktime Pro converting issues to iPod

Hello, I was wondering if I could get some help converting the video to an ipod format that has high quality not only in the ipod but when I plug it in into the tv too. I have a couple of screenshots to show the quality when I convert the video from .AVI format to .M4V. (The one on the left is in .m4v, the one in the right is .avi format) the other screenshot is to show my options for converting the video.

I want to know what should I do to make the video look good on the ipod and on tv using the av out.
