Quicktime Track Namea and MOV to MP4

How do I change the title of the audio track? I want to change them to English and Japanese, but right now they both are called undefined. Thanks!

The other problem is, if I do it with quicktime, I get a .mov. Then if I do a passthrough with quicktime to turn it into mp4 it only comes out with one audio track.
