I have a jpop radio station on iTunes and I love it.

I know my iPod obviously can' t get to that w/o the net, is there any way I could put an hour or two of the audio that comes off of it onto my iPod w/o using "hijacking" the audio. Those files are huge!

There's no way to record it without using a "hijack" app.

It's not difficult at all to use Audio Hijack. It's free. Just record 2 or 3 songs, split it using QT Pro or Audacity, import to iTunes, convert to MP3, lather, rinse, repeat...

The files aren't that big...
