I have a 2010 MacBook Pro which I believe only supports Sata II, correct? Will I see a major performance increase with two Samsung 840s in RAID 0 appose to just one?

I upgraded my mid 2009 MBP from the stock 5400RPM HDD to a Crucial M4 and the performance difference was huge. Adding a second drive would technically make it faster but I don't know if it would be noticeable for most users.

What do you use your computer for? How are you measuring performance?

It's more for messing around, my laptop is mainly used for web browsing, social media, etc.. But I want to play around with SSDs. Would there be a noticeable difference in opening and closing apps with the RAID?

In short, yes.

It would be faster opening apps but it may not be noticeable in normal usage.
