What RAM memory do I need for the newest 15" MBP (Non retina, obviously) or is it worth paying the extra 80 quid for the apple upgrade?

Also, should installing an after market SSD be the same as with the 2010 13" model?

I would do the Apple upgrade and have the ram under warranty as well. The only issue is Apple gives you 8GB and you could get 16GB for a bit more.
 
Never buy RAM from Apple. You can get 3rd party RAM for much cheaper and all big brands offer lifetime warranty, whereas Apple only offers one year unless you buy AppleCare. Upgrading RAM does not void warranty either.

As for the SSD, we don't know yet for sure but the process should be very similar.

Pretty sure Corsair offers like 10 year warranty for RAM. I would upgrade later.

Pretty much all RAM comes with lifetime warranty.
