I got the 16 GB because with my "workload" (aka literally just moderately heavy internet browsing) I got up to about 7.5 GB on a regular basis.

Just got the MBP and I'm seeing usage is up to 10 GB with the same browsing I've always done. Why is it using more RAM? I'm noticing a million entries of Google Chrome Helper. Is this a case of it using more RAM because it can?

I really know nothing about computers lmao

If you have the same RAM needs (you are doing basically the same tasks), and give your system more RAM (more is available), then your workload will use more RAM. The Mac is pretty good at memory management (not perfect, but pretty good), so if you have more RAM available, your system will use what it needs.
So, yes, your new MBPro uses more RAM because, well, there's more RAM. :D
And, good for you, when you are using Chrome (still a memory hogg  )
