Physical SIM or eSIM? If it's physical, you usually need to get a new SIM card from the carrier.
For eSIM, I just did the eSIM Quick Transfer to move my eSIM from the Air back to my SE 2022 while I was waiting for my iPhone 17 order to arrive. I believe the iPhone 12 Pro Max supports eSIM Quick Transfer so you should be able to do the same.

The physical sim (if you had one in your 12 Pro Max) won't work any more, however, you will be able to transfer eSIM back to your 12 Pro Max from iPhone Air and continue using your number. If you want to have a physical sim for any reason then you will have to visit your carrier's store.
