iOS Real-time collaboration application

We planned to built a real-time collaboration mindmapping application for tablets based on adobe interactive flash server, RTMP (Real Time Messaging Protocol) and Adobe Flex/Flash. But according to the actual Apple developer agreement this will not be possible anymore for iPad.

Any suggestions which client framework, application server and protocol to use to be compatible with Apple iPhone/iPad and optionally with Android, Windows and Web?

Xml Web Services would be the most universal method.
